Delightful pink cookies with a soft, cake-like texture and a creamy interior, perfect for any occasion.

Ingredients

  • 1/4 cup Cocoa Powder
  • 1/2 teaspoon Baking Soda
  • 1/4 teaspoon Salt
  • 1/2 cup Unsalted Butter, softened
  • 1 cup Granulated Sugar
  • 1/4 cup Brown Sugar
  • 1 large Egg
  • 2 tablespoons Buttermilk
  • 1 teaspoon Vanilla Extract
  • Red Food Coloring (to desired intensity)
  • Powdered Sugar (for dusting, optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Combine dry ingredients: whisk together flour, cocoa powder, baking soda, and salt in a medium bowl.
  3. Cream the softened butter, granulated sugar, and brown sugar in a large mixing bowl until light and fluffy, about 2-3 minutes.
  4. Add the egg, then buttermilk and vanilla extract, mixing until well incorporated. Gradually incorporate the red food coloring.
  5. Combine the dry ingredients with the wet mixture until just combined, avoiding overmixing.
  6. Scoop tablespoon-sized portions of dough onto prepared baking sheets, spaced about 2 inches apart.
  7. Bake for 10-12 minutes until set, with crisp edges and soft centers.
  8. Cool for a few minutes, then transfer to a wire rack and dust with powdered sugar if desired.

Notes

For a healthier version, use whole wheat flour. Store cookies in an airtight container for up to a week, or freeze for up to 3 months.
