Delicious bite-sized Pink Velvet Cheesecake Bites that combine creamy cheesecake filling with a crunchy graham cracker crust, perfect for any celebration.

Instructions

  1. Prepare the Crust: In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are evenly coated and resemble wet sand.
  2. Press the Mixture: Firmly press into the bottom of a lined 9×13-inch baking dish and chill in the refrigerator.
  3. Create the Filling: In a large bowl, beat together the softened cream cheese and powdered sugar until smooth.
  4. Incorporate Heavy Cream & Vanilla: Pour in the heavy cream and vanilla extract, mixing until the mixture is light and fluffy.
  5. Add Color: Fold in the pink food coloring until evenly distributed.
  6. Spread the Filling: Carefully spread the cheesecake filling over the crust.
  7. Top with Whipped Cream: Add a layer of whipped cream, optionally topping with sprinkles.
  8. Chill: Refrigerate for at least 4 hours to set.
