A comforting casserole featuring zucchini, seasoned ground meat, marinara, and melted cheese, perfect for a guilt-free pizza night.

Ingredients

  • 2 medium zucchinis, sliced
  • 1 pound ground meat (beef, turkey, or chicken)
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Optional toppings: pepperoni, bell peppers, mushrooms, or onions

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Brown the ground meat in a skillet over medium heat until fully cooked, draining any excess fat.
  3. Stir in the marinara sauce and Italian seasoning, then season with salt and pepper. Simmer for a few minutes.
  4. Layer half the zucchini slices in a baking dish.
  5. Spread half of the meat mixture over the zucchini.
  6. Sprinkle half of the mozzarella cheese on top.
  7. Repeat the layers with the remaining zucchini, meat, and mozzarella cheese. Finish with Parmesan.
  8. Cover the dish with aluminum foil and bake for 25-30 minutes.
  9. Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.
  10. Cool slightly before serving.
