Delicious crispy homemade roast potatoes with a fluffy interior and golden-brown crust, perfect for any meal.

Ingredients

  • 2 lbs Russet or Yukon Gold Potatoes
  • 1/4 cup Olive Oil
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 1 tsp Garlic Powder
  • 1 tsp Rosemary (fresh or dried)
  • 1 tsp Thyme (fresh or dried)
  • 1 tsp Smoked Paprika
  • Fresh Herbs (optional, for garnish)
  • Parmesan Cheese (optional, for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Prepare the potatoes by washing and cutting them into even chunks.
  3. Parboil the potatoes in salted water for about 5-7 minutes until just tender.
  4. Drain the potatoes and let them steam in the pot.
  5. Shake the pot gently to roughen the edges of the potatoes.
  6. Add olive oil and seasonings, tossing to coat evenly.
  7. Spread the potatoes on a baking sheet in a single layer.
  8. Roast for 30-40 minutes, turning them halfway through.
  9. Serve immediately, garnishing with fresh herbs and Parmesan if desired.

Notes

Make-ahead tips: Parboil and season potatoes in advance. Also, air frying is a great alternative for a quicker process!
