  • 1 cup graham cracker crumbs
  • 1/2 cup butter, melted
  • 16 ounces cream cheese, softened
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup lavender syrup
  • 3 large eggs
  • 1 cup heavy cream
  • 1 cup blackberries

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Prepare your crust by combining graham cracker crumbs and melted butter.
  3. Press the mixture firmly into the bottom of each mini springform pan.
  4. Blend the cream cheese, sugar, vanilla extract, and lavender syrup until smooth.
  5. Add the eggs one at a time, mixing well after each addition.
  6. Pour the cheesecake batter over the crusts in each mini pan.
  7. Bake for 20-25 minutes or until centers appear set.
  8. Chill the cheesecakes completely at room temperature, then refrigerate for at least 4 hours.
  9. Top each cheesecake with whipped cream and blackberries before serving.
