Delicious Keto Crispy Reuben Roll-Ups made with Swiss cheese, corned beef, and sauerkraut.

- 12 slices Swiss cheese
- 12 slices corned beef
- 0.75 cup sauerkraut, drained and patted dry
- 2 tablespoons Dijon mustard
- 1 tablespoon chopped parsley (optional garnish)
Instructions
- Preheat a nonstick skillet over medium heat. Drain and pat dry the sauerkraut to remove excess moisture.
- Place slices of Swiss cheese into the hot skillet, working in batches of 2–3 at a time depending on your skillet size.
- Cook the cheese for about 2 minutes until bubbly and edges begin to brown slightly.
- Top each cheese slice with 1 slice of corned beef, followed by about 1 tablespoon of sauerkraut and a drizzle of Dijon mustard.
- Use a spatula to gently roll the cheese slice into a log while still pliable. Roll tightly until sealed.
- Transfer to a plate and repeat with the remaining ingredients.
- Garnish with chopped parsley and serve warm with extra mustard or Russian dressing for dipping.
Notes
- Make sure to pat the sauerkraut dry to prevent sogginess.
- Serve immediately for the best texture.
- Can be enjoyed with different dipping sauces.
