  • 1 diced onion
  • 3 minced garlic cloves
  • 2 diced carrots
  • 2 diced celery stalks
  • 4 cups chicken broth

  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese, divided
  • 1/2 cup grated Parmesan cheese
  • 4 cups fresh spinach
  • 2 teaspoons Italian seasoning
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Sauté the vegetables: In a large pot, heat olive oil over medium heat. Add onion, garlic, carrots, and celery. Sauté for about 5 minutes until softened.
  2. Add the noodles: Stir in broken lasagna noodles, mixing well with the sautéed vegetables.
  3. Pour in the broth: Gradually add chicken broth and bring to a gentle boil.
  4. Incorporate cream and cheeses: Reduce heat, stir in heavy cream, ricotta, and half of the mozzarella until smooth.
  5. Add the spinach and seasoning: Fold in fresh spinach and Italian seasoning, simmering until noodles are cooked through, about 7-10 minutes.
  6. Final seasoning: Taste and adjust salt and pepper as needed.
  7. Serve and garnish: Ladle soup into bowls, top with remaining mozzarella and Parmesan, and allow cheese to slightly melt before serving.
