A comforting plate of crispy fries topped with hearty chili, melted cheese, sour cream, and fresh green onions – the perfect cozy dish for any occasion.

  • 4 medium Russet Potatoes (or sweet potatoes for a healthier twist)
  • 2 tablespoons Olive Oil (can substitute with canola oil)
  • 1 teaspoon Garlic Powder
  • Salt (to taste)
  • Pepper (to taste)
  • 2 cups Chili (Homemade or Canned; vegetarian or bean chili for a meatless option)
  • 1 cup Shredded Cheddar Cheese (or pepper jack for a spicy kick)
  • 1/2 cup Sour Cream (can substitute with Greek yogurt)
  • 2 tablespoons Chopped Green Onions (or chives for a milder flavor)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and slice the potatoes into even wedges or sticks, about ½-inch thick.
  3. Toss the potatoes in a large bowl with olive oil, garlic powder, salt, and pepper until fully coated.
  4. Spread the seasoned potatoes in a single layer on a baking sheet.
  5. Bake for 25-30 minutes, turning halfway through, until the fries are golden and crispy.
  6. While the fries bake, prepare the chili by heating in a skillet over medium heat.
  7. When the fries are done, remove them from the oven and layer the heated chili over the top.
  8. Sprinkle shredded cheese generously over the chili while it’s hot.
  9. Top with sour cream and green onions, then dive in straight away!

Notes

Make-ahead tips: You can prep your fries in advance by chopping and seasoning them. Store in the fridge until ready to bake.
