Deliciously flaky strawberry scones topped with a sweet and tangy lemon glaze, perfect for breakfast or an afternoon snack.

  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1 cup fresh strawberries, diced
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 lemon, zested and juiced
  • 1 cup powdered sugar (for glaze)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Whisk together the flour, sugar, baking powder, and salt until well combined.
  3. Add the cold butter, mixing it into the flour mixture until it resembles coarse crumbs.
  4. Fold in the diced strawberries until evenly distributed.
  5. Combine the heavy cream, vanilla extract, and lemon zest in a separate bowl, then pour over the dry ingredients and stir lightly.
  6. Turn the dough onto a floured surface and knead it a few times, patting it into a circle about 1-inch thick.
  7. Cut into wedges and place on the prepared baking sheet.
  8. Bake for 15-20 minutes, until golden brown.
  9. Prepare the lemon glaze by mixing powdered sugar with lemon juice until smooth.
  10. Drizzle the glaze over the cooled scones and serve immediately.
