Description

Deliciously fluffy and aromatic Garlic & Rosemary Focaccia Muffins, perfect for any occasion.


Ingredients

  • 1.5 pounds of pizza dough (pre-made or homemade)
  • ½ cup extra virgin olive oil (scant measurement)
  • 8 cloves of garlic, finely chopped
  • 4 sprigs of fresh rosemary, leaves removed and chopped
  • Flaky salt for sprinkling

Instructions

  1. Prep the Dough: Lightly grease a bowl and place the pizza dough inside. Allow it to come to room temperature, divide into 12 pieces.
  2. Prepare the Muffin Pan: Pour 1 teaspoon of olive oil into each muffin cup.
  3. Shape and Rest the Dough: Shape the dough into rough balls and place in the oiled muffin cups, cover and let rest.
  4. Prepare the Garlic and Rosemary Topping: Chop garlic and rosemary, heat remaining oil, then stir in garlic and rosemary.
  5. Assemble the Muffins: Spoon garlic-rosemary oil onto each dough ball, pressing dimples with fingers.
  6. Bake to Perfection: Bake in a preheated oven at 400°F for 14–16 minutes until golden brown.
