Description

A light and fluffy dessert featuring a yogurt cake base topped with sweet whipped cream, perfect for any occasion.


Ingredients

  • 100 g granulated sugar
  • 240 ml plain Greek yogurt
  • 60 ml vegetable oil
  • 4 large eggs, separated
  • 1 teaspoon vanilla extract
  • 125 g all-purpose flour
  • 1/4 teaspoon cream of tartar (optional)
  • 1/4 teaspoon salt
  • 1 teaspoon baking powder
  • 15 g powdered sugar
  • 120 ml heavy whipping cream
  • 1/2 teaspoon vanilla extract

Instructions

  1. Set your oven to 175°C. Get an 20 cm round cake pan ready by greasing it and adding parchment paper.
  2. In a separate bowl, sift together the flour, baking powder, and salt. Gradually mix these dry components into the wet mixture until just blended.
  3. Grab a large mixing bowl. Whisk the yogurt, vegetable oil, and vanilla extract together. Then add in the egg yolks and granulated sugar. Whisk everything until it’s smooth and well mixed.
  4. Using a clean bowl, whisk the egg whites together with cream of tartar until soft peaks appear. Gradually mix in 1 tablespoon of sugar, whisking until stiff peaks form.
  5. Carefully incorporate the whipped egg whites into the cake batter in 2 to 3 parts, being gentle so you don’t deflate it.
  6. Pour the batter into the prepared pan and level the top. Bake for 25 to 30 minutes or until golden brown, and a toothpick comes out clean when you check.
  7. After baking, let the cake rest in the pan for about 10 minutes. Then, move it to a wire rack to finish cooling down.
  8. In a chilled bowl, whip the heavy cream, powdered sugar, and vanilla extract until you get stiff peaks.
  9. When the cake’s cooled down completely, spread the whipped cream on top. You can serve it right away, maybe topped with fresh berries or a sprinkle of powdered sugar.

Notes

  • For an extra touch, add fresh fruits on top before serving.
  • Ensure that all ingredients are at room temperature for better mixing.
  • To make it lighter, you could use low-fat yogurt.
