Delicious and fluffy pancakes filled with cream cheese and topped with fresh strawberries.
Ingredients

- 2 tablespoons granulated sugar
- 2 teaspoons baking powder

- 2 cups buttermilk (room temperature)
- 2 large eggs
- 1/4 cup unsalted butter (melted and slightly cooled)
- 1 teaspoon vanilla extract
- 8 oz cream cheese (softened)
- 1/4 cup powdered sugar
- 1/2 teaspoon vanilla extract
- 1/4 cup heavy cream (cold)
- 1 1/2 cups fresh strawberries (hulled and chopped)
- 2 tablespoons granulated sugar
- 1 teaspoon lemon juice
- Whipped cream
- Maple syrup
- Powdered sugar
- Extra strawberries
- Fresh mint leaves
Instructions
- In a small saucepan, cook chopped strawberries, sugar, and lemon juice over medium heat for 5–7 minutes until softened. Let cool.
- In a bowl, beat cream cheese and powdered sugar until smooth. Add vanilla and heavy cream, whip until fluffy. Chill until ready to use.
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- In another bowl, combine buttermilk, eggs, melted butter, and vanilla.
- Gently mix the wet ingredients into the dry until just combined. Rest batter for 5–10 minutes.
- Heat a nonstick skillet over medium heat and grease lightly. Pour 1/4 cup batter per pancake. Cook 2–3 minutes per side or until golden.
- Stack pancakes with layers of cheesecake filling and strawberry topping between each. Top with whipped cream, syrup, and more strawberries.
- Serve warm with additional syrup and mint leaves if desired.
