Delightfully airy and colorful meringue cookies infused with flavored gelatin, perfect for any occasion.

Ingredients

  • 3 large egg whites
  • 1/4 teaspoon cream of tartar
  • 1/2 cup granulated sugar
  • 1/4 cup flavored gelatin (any color/flavor)
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 200°F (95°C) and line a baking sheet with parchment paper.
  2. Beat the egg whites and cream of tartar using an electric mixer on medium speed until soft peaks form.
  3. Gradually add the sugar while continuing to beat until stiff peaks form.
  4. Fold in the flavored gelatin and vanilla extract until fully incorporated.
  5. Pipe or dollop the meringue onto the prepared baking sheet.
  6. Bake for about 90 minutes, until dry and easily lifted off the parchment.
  7. Turn off the oven and let the meringues cool inside with the door slightly ajar.
  8. Store in an airtight container to keep fresh.
