A vibrant and flavorful Easter Poke Cake topped with whipped cream and colorful gelatin, perfect for festive celebrations.

  • 1 box white cake mix
  • 1 package (3 oz) Jell-O gelatin (strawberry, lime, orange or blue)
  • 1 cup boiling water
  • 1/2 cup cold water
  • 1 tub (8 oz) whipped topping (Cool Whip)
  • 1 cup mini marshmallows (optional)
  • Sprinkles or colored candy for decoration (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your baking pan.
  2. Combine the cake mix with eggs, water, and oil in a mixing bowl. Mix until smooth.
  3. Pour the batter into the prepared baking pan and bake for 25-30 minutes.
  4. Allow the cake to cool in the pan for 10 minutes.
  5. Poke holes all over the cake using a wooden spoon or straw.
  6. Dissolve the Jell-O gelatin in 1 cup boiling water.
  7. Add 1/2 cup cold water to the gelatin mixture and stir.
  8. Pour the Jell-O mixture over the poked cake and let it set.
  9. Transfer the cake to the refrigerator and chill for at least 2 hours.
  10. Spread whipped topping evenly over the chilled cake.
  11. Sprinkle mini marshmallows and colored candies on top before serving.
  12. Slice and serve the cake chilled.
