Description

Cucumber Cottage Cheese Wraps are a fresh and delicious snack that combines the creaminess of cottage cheese with crisp vegetables wrapped in soft tortillas.


Ingredients

  • 2 wraps Flour or Spinach Wraps Try whole wheat or low-carb variants.
  • 1 cup Cottage Cheese Substitute with ricotta or Greek yogurt.
  • 1 medium Cucumber Slice or julienne.
  • ¼ cup Red Bell Pepper Finely chopped, optional.
  • ¼ cup Fresh Dill or Parsley Chopped; swap for basil or cilantro.
  • Salt and Pepper To taste.
  • 1 tablespoon Lemon Juice Or white vinegar; apple cider vinegar works too.
  • ½ teaspoon Garlic Powder Or 1 small clove minced, optional.

Instructions

  1. In a medium bowl, combine cottage cheese, chopped dill or parsley, lemon juice, and salt and pepper. Mix thoroughly until well blended.
  2. Lay out the wraps on a clean surface. Spread a generous layer of the cottage cheese mixture evenly across each wrap.
  3. Arrange cucumber slices along the center. Add red bell pepper or any optional veggies on top.
  4. Starting from the edge closest to you, tightly roll each wrap, folding in the sides as you go.
  5. Slice each wrap in half diagonally and enjoy immediately or store in the fridge for up to 24 hours.
