- 2 wraps Flour or Spinach Wraps Try whole wheat or low-carb variants.
- 1 cup Cottage Cheese Substitute with ricotta or Greek yogurt.
- 1 medium Cucumber Slice or julienne.
- ¼ cup Red Bell Pepper Finely chopped, optional.
- ¼ cup Fresh Dill or Parsley Chopped; swap for basil or cilantro.
- Salt and Pepper To taste.
- 1 tablespoon Lemon Juice Or white vinegar; apple cider vinegar works too.
- ½ teaspoon Garlic Powder Or 1 small clove minced, optional.
Instructions
- In a medium bowl, combine cottage cheese, chopped dill or parsley, lemon juice, and salt and pepper. Mix thoroughly until well blended.
- Lay out the wraps on a clean surface. Spread a generous layer of the cottage cheese mixture evenly across each wrap.
- Arrange cucumber slices along the center. Add red bell pepper or any optional veggies on top.
- Starting from the edge closest to you, tightly roll each wrap, folding in the sides as you go.
- Slice each wrap in half diagonally and enjoy immediately or store in the fridge for up to 24 hours.
