Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup powdered sugar
  • 1/2 teaspoon salt
  • 1 large egg
  • 1 1/2 teaspoons peppermint extract
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1/2 cup crushed candy canes

Instructions

  1. In a large mixing bowl, beat 1 cup softened unsalted butter and 1 cup powdered sugar until light and fluffy (about 2–3 minutes).
  2. Add 1 large egg, 1 1/2 teaspoons peppermint extract, and 1 teaspoon vanilla extract. Mix until smooth.
  3. In another bowl, whisk together 2 1/2 cups flour and 1/2 teaspoon salt. Gradually mix the dry ingredients into the wet ingredients until just combined.
  4. Scoop about 1 tablespoon of dough and roll it into a 5-inch rope. Shape into a ring or twist and place on a parchment-lined baking sheet. Repeat with remaining dough.
  5. Chill shaped cookies for 30 minutes.
  6. Preheat oven to 350°F (175°C). Sprinkle each cookie with crushed candy canes, pressing lightly.
  7. Bake for 10–12 minutes until edges are lightly golden. Cool on the sheet for 5 minutes, then transfer to a wire rack.
