A delightful fusion of creamy cheesecake and cinnamon-spiced baked apples topped with a crunchy oat topping, perfect for any gathering.

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1/3 cup unsalted butter, melted
  • 12 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 2 large apples, peeled and diced
  • 2 tablespoons granulated sugar
  • 1/2 cup old-fashioned oats
  • 1/3 cup flour
  • 1/3 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1/4 cup unsalted butter, cold and cubed
  • Caramel sauce (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease your 9-inch pie dish.
  2. Prepare the crust by mixing graham cracker crumbs, brown sugar, cinnamon, and melted butter until combined. Press into the pie dish.
  3. Make the cheesecake filling by beating cream cheese, granulated sugar, vanilla extract, and egg until smooth. Spread over the crust.
  4. Toss diced apples with granulated sugar and cinnamon, then spread over cheesecake layer.
  5. Create the crisp topping by mixing oats, flour, brown sugar, and cinnamon, cutting in cold butter until crumbly. Sprinkle over the apples.
  6. Bake for 45-50 minutes until golden brown and set in the center.
  7. Cool completely then refrigerate for at least three hours before serving.
  8. Serve chilled or at room temperature, drizzled with caramel sauce if desired.

Notes

Great for make-ahead; flavors meld beautifully overnight. Can be made in an air fryer at 320°F for about 25-30 minutes.
