A soft and substantial cake filled with tart and sweet apple chunks, topped with luscious cream cheese frosting.

Ingredients

  • 1 ½ cups granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 3 large eggs
  • ¾ cup vegetable oil
  • 1 teaspoon vanilla extract
  • 2 cups diced apples (such as Granny Smith)
  • Cream cheese frosting for topping

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare your 9×13-inch baking pan by greasing it with cooking spray or butter.
  3. Mix the dry ingredients: In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt.
  4. Beat the wet ingredients: In a large mixing bowl, combine sugar and eggs; beat until fluffy. Gradually mix in oil and vanilla extract.
  5. Combine the dry mixture with the wet ingredients until just combined and fold in diced apples.
  6. Pour the batter into the prepared pan and smooth the top.
  7. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  8. Cool for 15 minutes in the pan before transferring to a wire rack and frost with cream cheese frosting once fully cooled.

Notes

Try adding nuts for crunch or raisins for sweetness. The cake improves in flavor when made a day ahead.
